Green Spinach & Mushroom Shakshuka Recipe

Green Spinach & Mushroom Shakshuka

Serves 2 | Ready in 25 Minutes


Ingredients:

  • 1 tbsp. coconut oil

  • 1 large onion, chopped

  • 2 garlic cloves, crushed

  • 300g (10.5 oz.) mushrooms, sliced

  • 450g (1 lbs.) spinach leaves

  • 4 eggs

  • handful of chopped parsley


Instructions:

  1. Sauté the aromatics:

    Heat the coconut oil in a large pan over medium heat. Add the onion and garlic, cooking for 2-3 minutes until softened, stirring occasionally.

  2. Cook the mushrooms:

    Add the sliced mushrooms to the pan and cook for another 3-4 minutes. Add salt and black pepper to your liking.

  3. Wilt the spinach:

    Add the spinach in batches, covering the pan with a lid to help it wilt. Stir well after each addition and repeat until all the spinach is incorporated. Adjust the seasoning as needed.

  4. Add the eggs:

    Create four small wells in the spinach mixture and carefully crack an egg into each well. Cover the pan with a lid and cook for 5-6 minutes, or until the egg whites are set but the yolks remain runny.

  5. Garnish and serve:

    Sprinkle with chopped parsley and serve immediately.
