Chicken Salad with Orange & Walnuts Recipe

Chicken Salad with Orange & Walnuts

Ingredients


For the Salad:

  • 200g (7 oz.) chicken breast

  • 60g (2 oz.) arugula (rocket)

  • ¼ iceberg lettuce, roughly chopped

  • 1 orange, peeled and segmented

  • ⅓ pomegranate, seeds only

  • 30g (1 oz.) pecans, roasted


For the Dressing:

  • 3 tbsp. honey

  • 2 tbsp. mustard

  • 1 tbsp. olive oil

  • 1 tbsp. lemon juice

  • 2 tbsp. orange juice

  • ⅓ tsp. cinnamon

  • Salt and pepper, to taste



Instructions:

  1. Prepare the orange:

    Peel the orange, separate the segments, and set aside. Squeeze the remaining juice and save it for the dressing.

  2. Make the dressing:

    In a small bowl, whisk together honey, mustard, olive oil, lemon juice, orange juice, and cinnamon. Season with salt and pepper to taste.

  3. Grill the chicken:

    Cut the chicken breast into four pieces, season with salt and pepper, and coat with olive oil. Grill over medium heat for 4 minutes on each side. Drizzle with 1 tbsp of dressing and grill for 1.5 minutes on lower heat. Flip, drizzle with another 1 tbsp of dressing, and cook for another minute. Remove from heat, let cool slightly, then slice.

  4. Assemble the salad:

    Mix the arugula and iceberg lettuce, then divide between two plates. Top with orange segments, grilled chicken, pomegranate seeds, and roasted pecans.

  5. Finish and serve:

    Drizzle the remaining dressing over the salad and enjoy immediately.
