Pesto Chickpea Toast Recipe

Pesto Chickpea Toast

Serves 2 | Ready in 20 Minutes


Ingredients:

  • 100g (3.5 oz.) canned chickpeas, drained

  • 1 tsp. paprika

  • 2 slices wholemeal bread, toasted

  • 3 tbsp. pesto

  • 1 tbsp. basil, chopped, to garnish

  • 1 tbsp. hemp seeds, to garnish

  • Salt & pepper, to taste

  • Olive oil, for roasting



Instructions:

  1. Roast the chickpeas:

    Preheat the oven to 425°F (220°C) and line a baking tray with parchment paper. Place the drained chickpeas on the tray, season with paprika, salt, and pepper, drizzle with olive oil, and toss well. Roast for 15 minutes until crispy.

  2. Prepare the toast:

    Toast the wholemeal bread slices until golden brown. Spread pesto evenly over each slice.

  3. Assemble & serve:

    Top the pesto toast with the roasted chickpeas. Garnish with fresh basil and hemp seeds for extra flavour and nutrition.
