PEANUT HONEY TOFU

Crispy golden tofu coated in a rich peanut-honey-ginger glaze, with just the right hint of heat all served up with crunchy tenderstem broccoli for balance.
It’s creamy, spicy, and a little sweet.
Peanut Honey Tofu
Servings: 4 | Ready in 45 Minutes
Ingredients:
1 tbsp. coconut oil
400g (14 oz.) tenderstem broccoli
350g (12.4 oz.) firm tofu
Sauce:
4 tbsp. natural peanut butter
2 tbsp. tamari or soy sauce
2 tbsp. water
5 tbsp. honey
1 tsp. sesame oil
½ tsp. chili flakes
1 tbsp. grated ginger
Instructions:
Drain the tofu and press between paper towels and plates with a heavy item on top for 30 minutes.
Cut the tofu into 1.25 cm (½-inch) cubes.
Mix the sauce ingredients in a bowl and set aside.
Steam or boil the broccoli until tender, then set aside.
Heat coconut oil in a pan over medium heat. Add the tofu and cook for 10-15 minutes, turning occasionally, until browned. Add the sauce and stir well.
Remove from the heat and serve with the broccoli.
