Quinoa Salad with Edamame

Looking for a quick, healthy, and protein-packed meal? This Quinoa Salad with Edamame is perfect for meal prep or a light lunch! Packed with crunchy veggies, protein-rich quinoa and edamame, and topped with a delicious homemade miso dressing.


It’s colorful, full of flavor, and so easy to make! Plus, it’s totally customizable: for even more protein you can add e.g. tempeh, tofu, or salmon!.



Quinoa Salad with Edamame

Servings: 6 | Ready in 30 Minutes


Ingredients:

Salad

  • 2 cups Quinoa (Cooked)

  • 1 1/2 cups Frozen Edamame (Shelled)

  • 2 Carrot (Shredded/grated)

  • 1 Yellow Bell Pepper (Diced)

  • 4 cups Brussels Sprouts (Finely sliced or shredded)

  • 4 stalks Green Onion (Sliced)

  • 1/2 cup Cashews (Crushed)


Miso Salad Dressing:

  • 2 tbsp white miso paste

  • 2 tbsp rice vinegar

  • 1 tbsp soy sauce (or tamari for gluten-free)

  • 1 tbsp sesame oil

  • 1 tbsp honey or maple syrup

  • 1 tsp grated ginger

  • 1 small garlic clove, minced

  • 2-3 tbsp water (to thin it out as needed)



Instructions:

  1. Cook the quinoa as per the packet instructions. Drain, rinse, and set aside.

  2. Next, start by cooking the edamame per the instructions on the back of the packaging. Once cooked, strain them using a sieve and keep them aside until you're ready to use them.

  3. Prepare, wash, and chop up all the veggies, and place them into a large mixing bowl. Add 2 cups of cooked quinoa, cooked edamame, and nuts to the mixing bowl.

  4. Make the Miso Salad Dressing. (Whisk everything together until smooth, or blend for an extra creamy texture.)

  5. Add the dressing to the salad bowl and toss everything well together.
